1/2 cup oil
4 squares unsweetened chocolate (I make a substitution with cocoa powder and oil: 12 Tbsp. cocoa powder and 4 Tbsp. oil)
2 cups sugar
1/2 tsp. salt
4 eggs
2 tsp. vanilla
2 cups flour
2 tsp. baking powder
1 cup chopped pecans
powdered sugar
Melt chocolate over low heat. [Omit this step if using the cocoa power and oil substitution.] Mix oil and sugar, then add the melted chocolate (or substitution). Add the eggs, one at a time, mixing well after each addition. Add vanilla. Mix in the dry ingredients and pecans. Refrigerate at least 2 hours or overnight. Shape into 1 inch balls and roll in powdered sugar. Bake at 350 degrees for 10-12 minutes. DO NOT OVERBAKE.
**Sometimes I add a half candied cherry to the center, especially for Valentine's Day.
