Scandinavian Almond Cookie
3/4 cup sugar
1 cup butter
1 egg
1 cup finely chopped almonds
1 teaspoon almond extract
2 1/2 cups flour
Cream together sugar and butter. Add egg, almonds, extract, and flour. Mold into sandkaker forms. Bake in 300 degree convection oven until golden brown. These take about 20 minutes.
