1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/2 cups (10-oz. package) mint-flavored semi-sweet chocolate morsels, divided
6 Tablespoons butter, softened
1 cup granulated sugar
1 1/2 teaspoons vanilla extract
2 eggs
2/3 cup confectioners' sugar
In small bowl, combine flour, baking powder and salt. In small saucepan over low heat, melt 1 cup mint flavored chocolate morsels. In large bowl, cream butter and granulated sugar. Beat in melted mint flavored chocolate morsels and vanilla; beat in eggs. Gradually beat in dry ingredients. Stir in remaining 1/2 cup mint flavored chocolate morsels. Wrap in plastic wrap; freeze for 30 min or until firm.
Preheat oven to 350 degrees F. Shape dough into 1-inch balls; roll in confectioners' sugar. Place on ungreased cookie sheets. Bake for 10-12 min or until sides are set but centers are still slightly soft. Let stand for 2 min; cool on wire racks.
Makes about 36 cookies.
